Beaufort cheese

Its name comes from the Beaufort valley, where it was first produced. Made in alpine chalets, high in the mountains, from milk from cows grazing in the alpine meadows alongside, Beaufort cheese comes in the form of a thick, cylindrical wheel, with a diameter of 60cm, and weighing between 40 and 60kg. It is matured in cool, damp cellars where the cheese makers regularly wash and brush the cheese.

Listed as being one of the highest dams in France, its size and importance in terms of hydroelectric energy production make it all the more impressive.
